文字通りには、今、まさに沈みかけている船から逃げ出すということだが、海上で沈みかけても逃げる場所がない。
なので、船が出航する前に逃げることを指していると思われる。

ネズミには、そういう動物的な予感があるのかもしれない。

転じて、沈みゆく企業や会社、政府などから、早めに逃げ出す人々の行為を指しているのだろう。

下の説明によると1600年くらいまでには、言われるようになったとある。

1500年代は大航海時代で、ネズミが実際に逃げ出す光景は、経験的に知られていたのではなかろうか。
